Banana Bread recipe
adapted from allrecipes.com
- 1/2 cup margarine
- 1 cup sugar
- 2 eggs
- 1 1/2 cups mashed bananas (I used 1 cup banana and 1/2 cup strawberry applesauce because I was short on bananas)
- 1 tsp vanilla extract
- 2 cups flour
- 1 tsp baking soda
- 1 tbs flour
- 1/4 cup brown sugar
- 1 tbs margarine
- 1/4 cup oats
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.
- Cream margarine and sugar until smooth. Beat in eggs, then bananas (and applesauce) and vanilla. Add flour and soda, stirring just until combined.
- Combine topping ingredients and mix until it comes together.
- Pour into prepared pan and sprinkle topping on. Bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

ReplyDeleteThis is a really good recipe! It came out nice and moist and yummy. I normally like nuts in my banana bread, but since I didn't have any I used a crumble to try to replace the texture nuts would give.
ReplyDeleteYou look so cute in the photo and your banana bread looks especially delish with that topping. I have a sweet treat linky party going on at my blog and I'd like to invite you to stop by and link your bread up. http://sweet-as-sugar-cookies.blogspot.com/2011/03/sweets-for-saturday-8.html
